We finally moved into our new house last weekend! I managed to photograph this blog post before finishing up on packing the kitchen. I am so ready to get settled into the new house and for life to slow down a bit before baby #2 makes his arrival in Sept!

Lots of projects and things going on over here. We put new floors and paint in the house a few weeks ago. Here’s a little peak on how it was looking before we moved in 🙂 I am loving the lightness, open space and gray walls.

The recipe I am sharing today was thrown together real quick after a failure on my attempt to make PB2 Banana Greek Yogurt Popsicles in my Zoku popsicle maker. It was an error in my part because I accidentally over filled the popsicle maker… so they were completely stuck in it and wouldn’t remove 🙁 No worries though, because A) I promise I will re-do and share some super delicious, healthy popsicle recipes soon and B) This yogurt parfait is equally as scrumptious! Besides, the PB2 Banana Greek Yogurt Parfait has basically the same ingredients as the popsicles I had in mind, but in parfait form!!

So what is PB2? If you haven’t tried it before, it’s basically powdered peanut butter. I saw it at Costco a few months ago for a really good deal and thought I’d give it a try (like $5-6 for 16 oz). The concept of it intrigued me. The packaging says its made from “superior quality peanuts that are first slow roasted then pressed to remove 85% of the fat and oil”. It suggests to add some to yogurt, shakes or vegetable stir fry for some extra with 85% less fat calories than traditional peanut butter.  You can also just add 1 tbsp. of water to 2 tbsp. PB2 to create instant peanut butter.

Whenever I ask Brandon what he wants for breakfast it’s usually, “puffy pancake!” Similar to a German or Dutch baby pancake, these Oven Puffed Berry Pancakes are addictive, flavorful and so fun to make. They kind of remind me of fry bread or a popover but much lighter and less fattening…crispy golden on the edges but with a dense custardy center.

Everyone have a nice Thanksgiving? We had a good time going to my parents’ house in Fountain Hills for the parade and then Thanksgiving meal later in the day.  So yummy.  My parents are great cooks!  It was also nice for Noelle to have both of her great grandpa’s there!

Now we are on to Christmas…I can’t believe it!

Now that we are in full holiday mode, I’m sure we are all feeling really busy and a bit stressed! The recipe I am sharing today is perfect for those days when you need a meal that is delicious and requires very little thought, prep and extra ingredients. I have made this plenty of times when I didn’t get around to making dinner plans or grocery shopping. It tastes like you went the extra mile, but really its super simple to make. Pretty much zero cooking skills needed.

I’m thankful for the amazing homemade banana bread my mom used to bake for us as kids. There’s just something so comforting about it. Warm, moist banana bread fresh from the oven.  mmmm.

I know everyone claims to have the best banana bread recipe…but this recipe is definitely the best, most flavorful, moist and healthiest banana bread! You’d never know it doesn’t have any butter or oil! I typically make it with just some chopped nuts but this time I decided to add some fall ingredients in honor of Thanksgiving. Cranberries and pecans!! It turned out so good!

Well it’s officially pumpkin season in my house, even though the first day of autumn is next Monday! It is my favorite season! Maybe because it follows our long hot Arizona summers. Wish we had a real fall season here in AZ with colorful leaves and chilly weather. But if it is at least cool enough to go outside, it’s all good with me! I suppose we can always take a 2.5 hr trip up to Flagstaff for some fall weather in a month 🙂

I am so addicted to these no bake energy bites! Imagine being able to eat peanut butter cookie dough without all the guilt 😉 Well this isn’t exactly cookie dough (no flour here), but they do have a similar nutty, sweet and scrumptious taste. These energy bites require no baking, can be made in minutes and put in the freezer for a quick snack when needed (or to help satisfy that sweet tooth). There’s just enough healthy fat, protein and fiber to give you long lasting “energy” and help curb your appetite.

They also make a great and healthy snack for your kids or babies. Our little Noelle just loves munching on them.  🙂  I typically give her some that are easier for her to chew with less nuts and she does great with them.   Easy to pack up in a snack bag and go! They’re also perfect for the lunch box and much cheaper than packaged bars. What makes them fun is how versatile they can be with whatever flavors and fillings you like. Get creative! I’ve seen some other recipes for Nutella, Almond Joy or Trail Mix energy bites. Yum yum!

Finally. Finally after spending a lot of time creating this blog, trying to learn how to properly use my camera (and still learning), working part-time and being a busy mommy, I am able to write my first post!

I’ve made these applesauce carrot cake muffins many times before and thought it would be a great recipe to share. What I love about them is that they not only taste like moist carrot cake, they are healthy too! They are super easy to make and contain no butter or white sugar. Not to mention, they fill your kitchen with the comforting aroma of cinnamon, nutmeg and ginger spices. It actually makes me a little excited for fall time, which is right around the corner. 🙂 I’m trying to think positive thoughts because today in Phoenix we just hit our record high for the year… 114 deg! Yikes.
