Hey there! Im baaack! Well I hope so anyway. Its been a busy year and was challenging to find time to work on my blog. During my last post, my daughter decided she was protesting nap time (the only time I could cook and photograph for the blog) so that put a big damper on things 🙁 She fought those for quite awhile and hasn’t taken scheduled naps since.
Since then we have also welcomed our second baby Owen into the family! He is such a ball of cuteness and we are beyond blessed to have him in our lives. 🙂
I’ve been wanting to get back on here again so I quickly attempted to photograph these mouth watering Strawberry Lemonade Pops I have been making this summer. We all LOVE taking them out by the pool with us, and are absolutely necessary in 100+ degrees!
They are super easy to make and the kids will love helping. All you need is water, sugar, lemon juice and strawberries (or any fruit you prefer!). Just stir the water and sugar together then add in the lemon juice and strawberries. Puree together with an immersion hand blender or regular blender. Pour into your popsicle molds according to the directions or place molds into the freezer until completely frozen. We use our Zoku popsicle maker and love it!! They are done in less than 10 min.
I didn’t add much sugar to these since the fruit brings out its natural sweetness which compliment the tart lemonade. They truly taste like summer and are a healthier, easy and refreshing treat for the whole family. Enjoy!

We finally moved into our new house last weekend! I managed to photograph this blog post before finishing up on packing the kitchen. I am so ready to get settled into the new house and for life to slow down a bit before baby #2 makes his arrival in Sept!
Lots of projects and things going on over here. We put new floors and paint in the house a few weeks ago. Here’s a little peak on how it was looking before we moved in 🙂 I am loving the lightness, open space and gray walls.
The recipe I am sharing today was thrown together real quick after a failure on my attempt to make PB2 Banana Greek Yogurt Popsicles in my Zoku popsicle maker. It was an error in my part because I accidentally over filled the popsicle maker… so they were completely stuck in it and wouldn’t remove 🙁 No worries though, because A) I promise I will re-do and share some super delicious, healthy popsicle recipes soon and B) This yogurt parfait is equally as scrumptious! Besides, the PB2 Banana Greek Yogurt Parfait has basically the same ingredients as the popsicles I had in mind, but in parfait form!!
So what is PB2? If you haven’t tried it before, it’s basically powdered peanut butter. I saw it at Costco a few months ago for a really good deal and thought I’d give it a try (like $5-6 for 16 oz). The concept of it intrigued me. The packaging says its made from “superior quality peanuts that are first slow roasted then pressed to remove 85% of the fat and oil”. It suggests to add some to yogurt, shakes or vegetable stir fry for some extra with 85% less fat calories than traditional peanut butter. You can also just add 1 tbsp. of water to 2 tbsp. PB2 to create instant peanut butter.
Hello! I have been slacking lately! Life has been busy the past month. I’ve been cleaning our house like crazy getting it ready for showings (it finally sold last week, yay!), holiday gatherings and getting ready for baby #2! We just found out last week we are having a BOY!! Noelle will just love being a big sister. I don’t think she quite understands it yet, but she knows theres talk about a “baby brudder”. 🙂
We decided to surprise everyone by announcing the gender on Easter. I made a coconut cream cake and filled it with blue jelly beans. Such a fun way to announce and the cake was sooo yummmy. I’m not much of a cake person, but home made cake is just so amazing!! Especially this recipe.

This light and flavorful Lemon and Fresh Herb Rice Salad is one of my favorite cold side dishes to make. It’s a perfect spring or summer salad to serve at your next party or potluck. I even enjoy just having a bowl for lunch.
If you have an herb garden it is also a great way to use up some of your mint, basil and cilantro! I was so glad I was able to use up a bunch of our mint leaves. And not to mention all the citrus fruits my parents have been giving me from their trees.

Oh my! I didn’t know it was possible to make this oh so addictive cookie recipe taste even better! I love making these Banana-Walnut Chocolate Chunk Cookies, but was inspired by Recipe ReDux’s theme of the month “Favorite Chocolate Matches” to add some peanut butter. Wow that totally brought them up to the next level!
Nothing tastes better with chocolate than bananas and peanut butter! I love making smoothies with that combination too. Sooo good.
This is one of our favorite quick and easy breakfasts! You will not believe these delicious and impressive pancakes require just a few simple ingredients, less than 10 minutes of prep time and 13 minutes in the oven. And they are so pretty, aren’t they?
Whenever I ask Brandon what he wants for breakfast it’s usually, “puffy pancake!” Similar to a German or Dutch baby pancake, these Oven Puffed Berry Pancakes are addictive, flavorful and so fun to make. They kind of remind me of fry bread or a popover but much lighter and less fattening…crispy golden on the edges but with a dense custardy center.

If you haven’t noticed already, there’s a cauliflower craze going on! Who knew this simple cruciferous vegetable would be so versatile? Lately I’ve seen recipes for roasted cauliflower, cauliflower gratin, rice, breadsticks, cheese sauce, tater tots and mashed cauliflower! I’ve even tried a few and they are all so good. What a great way to sneak in some veggies or just enjoy them in new ways!

The lovely folks at Cabot Creamery sent us a variety of samples of their amazing cheddar cheeses. Wow. What a treat! My husband and I happen to looooove sharp cheddar. Everyone have a nice Thanksgiving? We had a good time going to my parents’ house in Fountain Hills for the parade and then Thanksgiving meal later in the day. So yummy. My parents are great cooks! It was also nice for Noelle to have both of her great grandpa’s there!
Now we are on to Christmas…I can’t believe it!
Now that we are in full holiday mode, I’m sure we are all feeling really busy and a bit stressed! The recipe I am sharing today is perfect for those days when you need a meal that is delicious and requires very little thought, prep and extra ingredients. I have made this plenty of times when I didn’t get around to making dinner plans or grocery shopping. It tastes like you went the extra mile, but really its super simple to make. Pretty much zero cooking skills needed.
