Its the 21st again, and that means it’s Recipe ReDux time! This month we were asked to share a recipe of a favorite kitchen staple that we make from scratch but used to purchase in the past. I immediately thought of how I now make a lot of my salad dressings from scratch. You wouldn’t believe how simple they are to throw together and taste so good!
One salad dressing that is a favorite in our house is this Honey Balsamic Vinaigrette. Simply whisk together some balsamic vinegar, olive oil, honey, soy sauce, ground mustard and viola you have a wonderful homemade dressing that is bursting with flavor. I love that when you make your own dressings, you can totally customize it to your preference/salad theme, and they don’t taste as overly sweet/heavy/sugary/salty like some bottled dressings can be. Not to mention, you typically have the ingredients in your kitchen already!
This Honey Balsamic Vinaigrette pairs nicely with fruit toppings, meats, eggs or even nuts. I put this summer salad together with a few toppings I happened to have in the kitchen and thought would make a tasty combination. Strawberries, medjool dates, grapes, grilled chicken, feta, walnuts and fresh baby spinach. Yum!

You can make your dressings in any container but I happen to love this salad dressing container by Pampered Chef. You can add/measure ingredients in it, combine them with the built in mixer, pour from the spout and keep the lid on it to be stored in the fridge. Just use the mixer again to combine ingredients well for the next use. Easy!

- 5 c. fresh spinach
- 1 c. strawberries, sliced or chopped
- 1/2 c. medjool dates (pits removed), chopped
- 1/2 c. grapes, sliced in half
- 2 grilled chicken breasts, chopped (optional)
- 1/2 c. walnuts
- 1/2 c. crumbled feta
- 1/4 c. balsamic vinegar
- 2 tbsp. olive oil
- 1/2 tsp. soy sauce
- 2 tbsp. honey
- 1/2 tsp. ground mustard
- Whisk the dressing ingredients together in a small bowl and pour into a salad dressing bottle or container.
- Assemble the salad ingredients in a large serving bowl or make in individual bowls. Start with the spinach base and add all remaining toppings.
- Drizzle with the Honey Balsamic Vinaigrette. Enjoy!
