I’m excited to participate in my second monthly Recipe Redux contest. Libby’s Fruits and Vegetables is sponsoring this month’s challenge. They have a new product coming out to the shelves January 2015 and are challenging us to create healthy and delicious appetizers, soups, salads and side dishes, which can be made in ten minutes or less!

Let me introduce you to….Libby’s Vegetable Pouches! They are a time efficient and healthy source of shelf-stable vegetables that can be warmed up in their packaging within seconds! Not to mention they are environmentally friendly (the bag uses less energy to produce and compresses nicely for disposal), BPA free and are easy to open. The vegetable pouches will be available in five varieties: sliced carrots, sweet peas, cut green beans, mixed vegetables and sweet corn.

The simplicity of this new product is perfect for busy families or those nights when you need to whip something up real fast! If you have little kiddos, they could make a quick and easy finger food as well.

After much thought, I decided to create two delicious bruschetta recipes using sweet corn and sweet peas. They turned out soo good! I think they would make a perfect appetizer for the coming holiday season, when we are all time crunched and need to serve something easy yet delicious.  The first recipe is a combination of Libby’s Sweet Corn and fresh tomato mixed in a homemade balsamic dressing, then layered on top of a pesto spread.  And the second recipe is a quick and easy homemade pesto made with Libby’s Sweet Peas!

I’ve never actually made bruschetta before. The only times I’ve had it were at restaurants served with unique toppings such as prosciutto, fig, brie, salmon, etc. Well the good news is its possible to make some awesome bruschetta at home that is just as tasty and will definitely impress a crowd without having to get all those fancy expensive ingredients!  Of course you could always make a basic tomato and basil bruschetta, but these simple combinations taste like you went the extra mile in the flavor department.   

I love how elegant they look but really don’t take a whole lot of effort! The oven is only on for a matter of minutes and there is very little prep work. All you need is a baguette, Libby’s Vegetable Pouches and a few other ingredients you may already have in the kitchen! All of which provide a healthy dose of whole grains, fresh vegetables and heart healthy olive oil and vinegar. The flavor and freshness sure beats any other type of fried or highly processed appetizer. Or if you’re like me, you can have them for a light snack or lunch  After I made these the other day, I kept most the toppings in a jar stored in the fridge and have been making them for the past few days.

For either recipe, start by slicing your baguette into thick slices, brush with olive oil and broil until toasty for just a couple minutes.

For the Sweet Corn and Tomato Pesto Bruschetta, chop tomatoes (or use diced canned if you’re in a time crunch) and combine with Libby’s corn.  Mix in olive oil, balsamic vinegar, basil and salt/pepper to taste.  Spread a thin layer of store-bought pesto on the bread and a scoop of the corn mixture.  And voila, you are good to go!

Or to make the Sweet Pea Pesto and Tomato Bruschetta, simply combine  Libby’s Peas, basil, garlic, parmesan cheese, lemon juice and salt/pepper to taste in a food processor or blender.  Blend for about 3 seconds until its mixed well but still has texture.  Lay some mozzarella slices on the bread, top with the pea pesto and diced tomatoes. 

Serve immediately and enjoy!

Ingredients
  1. 1 whole wheat baguette
  2. 4 roma tomatoes, diced (or drained canned diced tomatoes if you're in a real time crunch)
  3. 1.5 cups Libby's Sweet Corn, from 1 vegetable pouch
  4. 1 Tbsp. olive oil
  5. 2 tsp. balsamic vinegar
  6. 2 Tbsp. fresh basil, chopped
  7. salt and pepper to taste
  8. Pesto spread, store bought
Instructions
  1. Preheat the broiler. Slice the baguette into fairly thick slices (I got about 20 slices from my baguette). Brush with olive oil and broil until toasty for just a couple of minutes. Keep an eye on it as it should toast quickly!
  2. In a mixing bowl, combine the corn (no heating necessary) along with the diced tomatoes, olive oil, vinegar, basil and salt/pepper to taste.
  3. Spread a thin later of pesto on the bread and top with the corn and tomato mixture.
  4. Serve immediately and enjoy!
Notes
  1. Number of servings may vary on the size of your baguette and slices.

Ingredients
  1. 1 whole wheat baguette
  2. 2 Libby's Sweet Peas vegetable pouches (26 oz total)
  3. 1 tsp. garlic
  4. 1 cup fresh basil, chopped
  5. 2/3 cup parmesan, bought pre-grated
  6. 2 tsp. lemon juice
  7. salt and pepper to taste
  8. 40 slices fresh mozzarella, pre-sliced in the packaging (or 20 if you only want 1 per bruschetta)
  9. 2 roma tomatoes, diced (or drained canned diced tomatoes)
Instructions
  1. Preheat the broiler. Slice the baguette into fairly thick slices (I got about 20 slices from my baguette). Brush with olive oil and broil until toasty for just a couple of minutes. Keep an eye on it as it should toast quickly!
  2. Combine the peas (no heating necessary), garlic, basil, parmesan and lemon juice in a food processor or blender for about 3 seconds. You want it blended but not completely pureed, so it still has some texture.
  3. Taste and adjust ingredients if needed. Season with salt and pepper to taste.
  4. Lay 2 slices of mozzarella on each piece of bread. Top with a layer of pea pesto and sprinkle some diced tomatoes on top.
  5. Serve immediately and enjoy!

  1. Number of servings may vary on the size of your baguette and slices.
