Oh my! I didn’t know it was possible to make this oh so addictive cookie recipe taste even better! I love making these Banana-Walnut Chocolate Chunk Cookies, but was inspired by Recipe ReDux’s theme of the month “Favorite Chocolate Matches” to add some peanut butter. Wow that totally brought them up to the next level!
Nothing tastes better with chocolate than bananas and peanut butter! I love making smoothies with that combination too. Sooo good.

Happy NationalPastaMonth! I was presented with the opportunity to participate in a recipe challenge contest put on for Recipe Redux members by the National Pasta Association to share some pasta dishes that fit into my healthy lifestyle. So for the next week I will be sharing a few mouthwatering and nutritious recipes using pasta.
Today I’m excited to share my Easy Thai Peanut Noodles, one of our new favorite meals! For awhile now I’ve been trying to figure out how to make a tasty pad thai but with out the fish sauce, rice noodles and less common ingredients that I’d have to buy and probably use only once. Finally I came across this version I have adapted, which uses spaghetti noodles and other ingredients you probably already have in the kitchen. It is seriously so simple to make and is ultra flavorful. It is also a great dish for the little ones to try. Our little Noelle can easily pick it up as a finger food and its not too saucy/messy. Win-win!
I am so addicted to these no bake energy bites! Imagine being able to eat peanut butter cookie dough without all the guilt 😉 Well this isn’t exactly cookie dough (no flour here), but they do have a similar nutty, sweet and scrumptious taste. These energy bites require no baking, can be made in minutes and put in the freezer for a quick snack when needed (or to help satisfy that sweet tooth). There’s just enough healthy fat, protein and fiber to give you long lasting “energy” and help curb your appetite.
They also make a great and healthy snack for your kids or babies. Our little Noelle just loves munching on them. 🙂 I typically give her some that are easier for her to chew with less nuts and she does great with them. Easy to pack up in a snack bag and go! They’re also perfect for the lunch box and much cheaper than packaged bars. What makes them fun is how versatile they can be with whatever flavors and fillings you like. Get creative! I’ve seen some other recipes for Nutella, Almond Joy or Trail Mix energy bites. Yum yum!
